Sloe whisky is a twist on the traditional and much loved sloe gin, made the same way, but using a different spirit base. The sloes growing on the blackthorn are all from our organic farmland. We pick the sloes in early autumn, after the first frost has split the skins and sweetened the fruit. The sloes are then macerated in an organic malt whisky, Highland Harvest, mixed with a modest amount of organic cane sugar. After 6 to 9 months the golden red nectar is filtered, bottled and ready to drink.
As with our sloe gin, this is best served neat, with or without ice. The whisky taste is smoothed and sweetened by the sloes and the sugar, and hints of almond and honey can be tasted. It is delicious mixed with champagne for a heady cocktail. Sloe whisky is wonderful with chocolate desserts, and makes delicious chocolate truffles.
